Famous dish of the Oriental cuisine that is distinguished apart from its delicious taste by a high nutritive value due to the contents of bulgur (cracked wholemeal wheat) rich in vegetable proteins, carbohydrates and red meat rich in vitamin B. The name is derived from the shape of this meal where “kibbeh” means a ball or a small ball in Arabic. The outer coat of kibbeh is ball-shaped or egg-shaped. Traditionally, this dish was prepared by crushing the meat together with the bulgur in a mortar manually. The outer coat is stu ed with minced meat, onion and nuts. Owing to the di cult preparation, the meal used to be a criterion in the Middle East of the skills of the woman who prepared it. Kibbeh may be prepared in several ways. It may be prepared with a yoghurt sauce or fried immersed in oil. Kibbeh is served as a main dish or as a starter together with other meals. Kibbeh is considered a traditional dish in several countries, e.g. in Syria, Lebanon, Palestine and it spread from these countries into many other countries in the world.
